TURKISH RECIPE OF THE MONTH
Artichokes cooked with Olive Oil- Zeytinyağlı Enginar
6 large artichokes outer leaves and chokes removed
2 medium onions, cut in half or 300 gr shallots
5 spring onions chopped in to 3
½ cup chopped dill
100 gr fava beans ( optional)
1/4 cup olive oil
1 cup of hot water
Juice of ½lemon
1 teaspoon sugar
Salt to taste
1/2 cup chopped dill for garnish
Drop artichokes in to the bowl of water with lemon juice to prevent discoloration.
Drain well and arrange stalk side up, in a large saucepan in one layer.
Add other ingredients, cover and on a medium heat cook gently for 20 minutes until tender and most of the cooking liquid has been absorbed.
Add a little finely chopped dill towards the end of cooking time. Remove from the heat and set aside to cool in the pan.Serve cold as an appetizer.
